McGregor’s Jim Walker is a busy ‘Beaver’
The Sandy Beaver is open for business in the former Big Sand Bar location in McGregor.
You might find a sandy beaver while riding the ATV trails of Aitkin County. As it turns out, The Sandy Beaver Bar and Bistro has a permanent home in McGregor.
Jim Walker owns this new bar and restaurant. Walker is newly retired from his career in law enforcement “and was looking for a new and exciting career change,” the owner explained. He believes he has watched enough restaurant reality TV and FoodNetwork to give this thing a go.
This restaurant is located on, you guessed it, Big Sandy Lake. The Sandy Beaver gets its naming inspiration from the area. “I told family and friends about all the beavers in the area, so it had to be something beaver,” explained Walker. The menu and dishes offered can be described as American, “with influences from all over the United States,” according to the owner. “It’s going to be a fun and friendly place for everyone to enjoy.”
